Fish Tacos served with black beans and a corn, jicama and mango salad. Topped with guacamole and pico de gallo

Recipe Ingredients for Fish Tacos

30 ears of corn, roasted and cut off cob
10 jicama, sliced
30 mangoes, diced
10 avocado, diced
10 tbs jalapeno, minced
2 cups cilantro
5 tbs honey
5 tbs apple cider vinegar
1 1/2 tsp salt
3 1/3 cup canola oil
10 onion, small dice
30 tomato, small dice
1 cup jalapeno, minced
4 cups lime juice
1 tsp sea salt
25 avocado
6 red onion
1/2 cup jalapeno, minced
1 1/2 cups cilantro, chopped
3/4 cup lime juice
1 tsp sea salt
6 tomato
1 1/2 cup extra virgin olive oil
12 onion, small dice
12 green bell pepper, small dice
75 garlic cloves
1 cups ground cumin
2 1/4 cups white vinegar
1 cup bay leaves
3/4 cups paprika
1/2 cup oregano
2 tbs cayenne
1 tbs salt
12 lbs canned black beans
30 egg whites
25 lbs. halibut
12 cups cornmeal
200 whole-wheat tortillas
6 cups monterey jack cheese
6 cups shredded romaine lettuce
4 cups reduced fat sour cream

Recipe Directions for Fish Tacos

  1. jicama salad: place corn, jicama, mangoes, avocado and jalapeno in bowl.

  2. combine dressing ingredients and pour over

  3. pico de gallo: combine all ingredients and mix well

  4. Guacamole: combine all ingredients except tomato and combine until creamy. fold in tomato

  5. black beans: heat oil in skillet and add onion, pepper, garlic, vinegar and spices. simmer until onion is soft and remove bay leaves.

  6. add half the beans and smash the othe half. Add the crushed beans and let thicken

  7. Fish tacos: preheat oven to 400 degrees

  8. lightly beat egg whites. place cornmeal in bowl

  9. pat fish dry and dredge in egg whites and then in cornmeal to coat. place on prepared sheet pan.

  10. Bake for 20 minutes or until fish easily flakes turning once during cooking.

  11. heat tortillas and fill with fish, cheese, lettuce and sour cream. top with guacamole and pico de gallo
