Tasty fish tacos make a rewarding, filling meal with very few calories and very little fat.

Recipe Ingredients for Fish Tacos

1 pound flounder
2 tablespoons chili powder
1 tablespoon cumin
2 cloves garlic
1 teaspoon lime juice
1 1/2 cups diced tomatoes
6 flour tortillas

Recipe Directions for Fish Tacos

  1. Place flounder fillets in skillet.

  2. Sprinkle seasonings over fish (you may use taco seasoning in place of the chili powder and cumin).

  3. Cook till fish is opaque and flakes easily, then break up fillets into small chunks.

  4. Add the tomatoes - you may use canned diced tomatoes here.

  5. Add the garlic (use a garlic press or mince) and a splash of lime juice.

  6. Divide into 6 flour tortillas. Top with lettuce, lowfat cheese, and corn salsa (just mix together a can of corn, a handful of fresh cilantro leaves, chopped, and half of a red onion, diced).
