Fish tacos with quinoa, mang, and black bean salsa

Recipe Ingredients for Fish tacos with quinoa, mango, and black bean salsa

1 gallon club soda
9 1/2 c. all purpose flour
4 3/4 c. whole wheat flour
2 T. salt
5 t. dried oregano
1 T. cayenne pepper
5 t. black pepper
24 lbs. cod
7 c. canola oil
25 c. quinoa
6 1/4 gallons water
25 c. cilantro
25 c. orange juice
12 1/2 c. rice vinegar
12 1/2 c. sesame oil
2 1/4 c. ginger
2 T. salt
100 mangos, diced
100 bell peppers, diced
6 1/4 c. black beans
200 tortilla

Recipe Directions for Fish tacos with quinoa, mango, and black bean salsa

  1. place club soda, flour, dried seasonings in a blender and blend until smooth.

  2. transfer to a hotel pan

  3. cut cod into .5 by 2 inch strips

  4. heat oil in tilt skillet

  5. batter fish coating all sides

  6. transfer to 200 hotel pan in single layers to the steam table for service

  7. toast quinoa in a large rondo untill it crackles and becomes aromatic

  8. transfer to a sieve and rince thoroughly

  9. return to the rondo and add water

  10. bring to a simmer and cook till tender about 20 min.

  11. toss all the remaining ingredients togther

  12. when quinoa is finished toss with mango mixture

  13. store proporly or serve immedeatly
