Yummy crunchy flavorful Fish tacos

Recipe Ingredients for Fish Taco Delight

1/2 lb Flounder
2 wedges laughing cow cheese
4 tbsp red cabbage
1/8 cup fat free plain yogurt
1/8 cup mayonnaise
1 tsp lemon juice
1 tbsp chipotle hot sauce
1/4 tsp sea salt
1/2 tsp black pepper
3 garlic cloves
4 tomatillos
1 tsp fresh jalapeno pepper
1/2 yellow onion
4 corn tortillas
1 tbsp olive oil
1 tsp garlic powder
1 tbsp fresh cilantro

Recipe Directions for Fish Taco Delight

  1. Roasting the vegetables

  2. preheat oven to 360 degrees

  3. in a bowl add tomatillos, garlic, onion and jalapeno pepper

  4. toss with enough olive oil to coat

  5. in a baking dish roast these vegetables for 20 minutes in the oven

  6. Cooking the fish

  7. Dry fish with paper towels

  8. sprinkle fish with Mrs. Dash non salt herb seasoning and pepper

  9. add a tsp of olive oil and fry

  10. Fish Taco Sauce

  11. In a bowl mix the yogurt, mayonnaise, salt, pepper, lemon and garlic powder until smooth. Mix in a little chipotle hot sauce at a time to taste

  12. Green Salsa

  13. After veggies are roasted

  14. cut off a piece of jalapeno and taste test for heat/spicy

  15. add veggies to a food processor or blender and puree.

  16. add jalapeno to your liking

  17. Assembling the taco

  18. On a corn tortilla spread green salsa until lightly covered

  19. using laughing cow or weight watchers cheese shredded cheese cover salsa lightly

  20. place in oven until cheese is melted

  21. pull from oven and place in a hot skillet with a small amount of olive oil and lightly fry until tortilla is crisp

  22. break of pieces of the flounder and place on top of cheese

  23. add the fish taco sauce

  24. sprinkle with cilantro

  25. fold in half and enjoy
