Fish baked in foil packages - great for grilling!

Recipe Ingredients for Fish and Summer Vegetable en Papillote

1 c cherry tomatoes
1 c yellow squash
1 c zucchini
1 c thinly sliced red onion
12 green beans
1/4 c pitted Kalamata olives
2 T lemon juice
1 T fresh oregano
1 T olive oil
1 tsp capers
1 T butter
1 tsp ground pepper
1 pound salmon fillets

Recipe Directions for Fish and Summer Vegetable en Papillote

  1. Combine tomatoes, squash, onion, green beans, olives, lemon juice, oregano, oil, butter, capers, and pepper in a large bowl.

  2. To make a packet, lay two square sheets of heavy duty foil on top of each other. Cover it with vegetable cooking spray. Place one portion of fish in center of foil. Sprinkle with salt and pepper, top with about 1/4 of vegetable mixture.

  3. Make a packet out of foil by bringing ends to the center and pinching tightly to form a seal. Leave enough room for steam to form on the inside of the packet. The steam cooks the begetables and fish.

  4. Preheat over to 425 degrees. Place packets on oven rack. Bake pacets in middle of over for about 20 minutes or until fish is flaky. Be careful opening packet as the steam will escape quickly.
