Tilapia with tomato and chicken stock

Recipe Ingredients for Fish Stew

1 cup Tomato Sauce - Homestyle Recipe
1 cup Chicken Stock
2 carrot (7-1/2") Carrots
1 medium Squash, Summer, Zucchini, Includes Skin
2 stalk, large (11"-12" long) Celery
1 small Onions
3 clove Garlic
8 oz raw Farm-Raised Tilapia Fillet
4 tsp Olive Oil
3 sprigs Coriander Leaves

Recipe Directions for Fish Stew

  1. Sauté chopped onions and garlic in olive oil.

  2. Add chicken stock, tomato sauce and water to onions and garlic and bring to a boil.

  3. Cut celery and carrots to preference and add to boiling mixture. Add coriander (cilantro). Slow boil until soft. Approximately 45 minutes.

  4. Slice zucchini squash and add to mixture. Slow boil for about 10 minutes.

  5. Slice fish to bite size pieces and add to mixture. Slow boil for about 10 minutes.

  6. Serve over rice
