Fish Stew Recipe

This is a one pot meal that is filling and healthy.

Recipe Ingredients for fish stew

500 grams cod
500 grams crushed tomatoes
1 onion
1 leek
4 carrots
4 potatoes
1 cup chopped celery root
1/3 cup dry white wine
2 cups fish stock
1 dash of thyme
1 dash of parsley
1 dash of salt

Recipe Directions for fish stew

  1. peel, wash and chop all vegetables

  2. fry onions and leek until transparent and sweaty. Add wine.

  3. When wine reduces by about half, add crushed tomatoes and fish stock, and bring to a boil.

  4. Reduce heat to a simmer and add remaining chopped vegetables. Cook covered for 15 minutes or until vegetables are nearly done.

  5. Chop fish filets is sizeable cuts and drop into simmering vegetable soup. Once fish is in the soup, avoid stirring as this will break apart the flesh of the fish.

  6. Also to remain cooking at a simmer for another 7 minutes.

  7. Turn off the heat.

  8. Add parsley and remaining spices.

  9. Taste soup. If you feel it is too sweet from the carrots, add juice of one lemon. Adjust salt.

  10. Serve immediately.
