Italian style fish soup, great with crusty white or garlic bread

Recipe Ingredients for Fish Soup with Roasted Tomatoes, Paprika & Oregano

1000 grams Tomatoes, Red, Ripe
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium raw Onion Red
0.33 cup Olive Oil
1 tsp Sugars, Granulated
8 tsp Paprika
2 1tsp Olive Oil
500 grams Fish Fillets White Natural
1 tbsp Tomato Paste
1.5 cup Fish Stock
1.5 cup Vegetable Stock

Recipe Directions for Fish Soup with Roasted Tomatoes, Paprika & Oregano

Roast tomatoes with paprika, oregano, onion, olive oil & pepper for 25 minutes. Fry fennel first, then the fish separately in a little olive oil. Add the tomato paste , stocks & fennel to the to the tomato mixture. ladle into bowls & top with the cooked fish
