Keep shells on shrimp if possible while cooking to add flavour to broth. Can add lemongrass or fresh ginger for an asian taste.

Recipe Ingredients for Fish Soup

3 oz tilapia fillet
3 oz sole fillet
6 large shrimp
3 oz squid
12 mussels
1/4 cup celeriac, diced
1/4 c leek, minced
1/8 c red pepper, diced
1/4 c fennel, chopped
1 tsp fresh thyme
1 tsp olive oil
1/4 tsp pepper
1/8 tsp sea salt
1 clove garlic
1 l water

Recipe Directions for Fish Soup

Saute vegetables in olive oil until just starting to brown. Add fish fillets and seasonings and let cook for 2 minutes. Add rest of seafood and water, reduce heat to simmer, covered for 15 minutes.
