Soup with vegetables, fish, and potatoes.

Recipe Ingredients for Fish Soup

2 tbs. olive oil
1 leek, chopped
1 medium onion, chopped
2 medium carrots, chopped
3 cups vegetable broth
5 small potatoes, peeled and chopped in bitesize pieces
12 oz flounder fillets
2 tbs butter
1/4 cup flour
1 cup milk
1 Salt, pepper, thyme

Recipe Directions for Fish Soup

Saute leek, onion and carrots in olive oil in a large pot. Add broth, potatoes and fish and simmer until potatoes are done. Meanwhile, in another small pan, melt butter and sprinkle in flour stirring to make a roux. Slowly add milk stirring constantly until it thickens. When potatoes are done, add milk and flour mixture. Season with salt, pepper and thyme.
