No A+ this one, but very tasty. Use any combination of seafoods for the fish - some smoked fish can be delicious as it gives a lovely smoky flavor. Muscle meat also very good in stead of prawns

Recipe Ingredients for Fish Soup

1 liter fish stock
300 ml dry white wine
3 cups chopped onion
4 cups chopped leek
2 cups carrot, cubed
2 cups potato, cubed
2 tablespoons tarragon
500 gram shrimp
500 gram salmon
250 ml cream

Recipe Directions for Fish Soup

  1. Chop your veg and soften in the pan with a spray of low-cal cooking spray. When softened, add the wine and let it reduce to about half.

  2. Add the fish stock and the tarragon, and let the broth simmer until the potatoes are just about cooked.

  3. Add the shrimp and fish, and simmer until just done. Flavor with a little pepper. It is unlikely you will have to add salt with the stock.
