Recipe Ingredients for Fish Provencale (Mediterranean fish soup)

1 kg haddock fillet, skinless
1 bulb fennel
6 cups chicken broth, reduced-sodium
1 cup onion, chopped
1 cup summer squash, cubed
2 cup dry white wine
2 tsp orange peel, shredded
6 cloves garlic, minced
14 1/2 oz chopped tomatoes
2 tbsp fresh thyme, snipped
1 cup broccoli slaw

Recipe Directions for Fish Provencale (Mediterranean fish soup)

  1. Thaw fish, if frozen. Rinse, pat dry. Cut into 1-inch pieces; set aside.

  2. Cut off and discard upper stalks of fennel. Remove any wilter outer layers; cut a thin slice from base. Wash fennel; cut in half lengthwise and thinly slice.

  3. In a large saucepan combine fennel, broth, onion, squash, wine, orange peel, and garlic. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes. Stir in fish pieces, undrained tomatoes, and the two tablespoons thyme. Cook about 3 minutes more or just until fish flakes easily when tested with a fork. Ladle into bowls.
