Recipe Ingredients for Fish Nuggets

1 lb tilapia
90 grams ritz crackers (about 30 crackers)
2 eggs
1 egg white
4 tbsp vegetable oil

Recipe Directions for Fish Nuggets

Crush crackers in a re-sealable plastic bag, set aside. Beat eggs in a pie plate, set aside. Cut fish into 1-2 inch chunks. Heat oil on low in a large non-stick skillet. Place fish in eggs, then in cracker crumbs. Place breaded fish in hot pan so that each piece of fish is touching the bottom of the pan. (You may need to do more than one batch so the fish isn't over-crowded.) Cook on low for 5-6 minutes per side, for a total of about 10 minutes or until fish is nicely browned. Blot excess oil with a paper towell before serving.
