Rice with aubergine and fish (could be meat or chicken, if liked)

Recipe Ingredients for Fish moulochia

2 cups rice, white long-grain
1 eggplant
2 tbs vegetable oil
1 pinch salt
1 pinch pepper
400 g salmon, cooked

Recipe Directions for Fish moulochia

  1. Rince rice and stand to soak in warm water.

  2. Fry aubergine until lightly browned.

  3. Place rice, fish and aubergine in the pan, in rough layers.

  4. Bring to boil and leave to simmer until rice is cooked.

  5. Season and spice to taste.
