Tilapia or other white fish with cucumbers and tomato and greek flavoring.

Recipe Ingredients for Fish Fillet Greek Style

2 fish fillets
1/2 pint cherry tomatoes
1/2 cucumber
1/3 c diced onions
2 cloves garlic, minced
4 oz artichoke hearts
6 oz diced tomatoes
3/4 t Greek seasoning
1/8 c white wine
1/2 T Extra Virgin Olive Oil
1 dash pepper
2 T Greek salad dressing

Recipe Directions for Fish Fillet Greek Style

  1. Season both sides of fish with pepper and Greek seasoning.

  2. Place oil in pan and add garlic and onions and cook for 2 minutes until onions are slightly softened.

  3. Add fish fillets and top with artichoke hearts, tomatoes and wine.

  4. Cover and cook for 8 to 10 minutes or until fish is cooked, stirring vegetables once.

  5. Serve with:

  6. 1/2 cucumber, sliced and quartered, 1/2 pint of cherry tomatoes, halfed, 1/4 cup diced onions (purple), 2 T Greek salad dressing and 1/4 t Greek seasoning. Let stand 15 minutes to blend flavors. Serve as a side with fish fillets.
