My style. Totally messed up the fish but taseted good.

Recipe Ingredients for Fish Curry

334 g Halibut, Atlantic And Pacific
500 g eggplant, cubed
15 g green onion, chopped
15 g ginger, chopped
2 cloves garlic, minced
20 g cilantro, chopped
6 oz light coconut milk
1 tsp salt
1 tbsp extra virgin olive oil

Recipe Directions for Fish Curry

  1. Heat the oil, and add the halibut skin side down. Brown the skin if possible. Then add green onion, ginger and garlic.

  2. Add 3/4 cup light coconut milk and eggplants. Cook for 20 minutes or until eggplant becomes all soft.

  3. Add basil and cilantro. Heat another 5 minutes or so.
