you can roast the corn and pepper at 450 for about 15 minutes if you like roasted corn

Recipe Ingredients for Fish and corn in foil

4 ounce orange roughy fillet (or fish of choice)
1 c corn
1/4 c finely chopped red pepper
1 tsp minced garlic
1 pinch salt and pepper
1/2 teaspoon olive oil
1/2 teaspoon chopped fresh rosemary

Recipe Directions for Fish and corn in foil

  1. preheat to 400

  2. mix all but the fish, oil, and 1/2 the rosemary

  3. place mixture on foil

  4. place fish on top, brush with the oil and sprinkle with the remaining rosemary, and salt and pepper if you want

  5. seal foil and bake about 15 minutes until fish is cooked through
