Tasty, not overly rich fish chowder

Recipe Ingredients for fish chowder

1 cup Whole Milk
16 oz Cod
1 small Onions
3 Teaspoon Thyme
0.5 tbsp Corn Starch
1 oz Pancetta
2 tbsp Butter
2 Potato medium (2-1/4" to 3-1/4" dia) Potato, Flesh And Skin

Recipe Directions for fish chowder

  1. Dice onion into 1/2 in. pieces

  2. Cook onion and pancetta in butter until onion is soft, but not browned

  3. Add 5 cups water

  4. Bring to a simmer

  5. Slice cod in 3-4 pieces and add to water

  6. Remove pot from heat, cover pot and let it sit until fish is opaque, but not cooked through

  7. Remove cod and put in separate bowl

  8. Add milk and return to simmer

  9. Add potatoes and simmer until potatoes are tender (about 20 min)

  10. Return fish to pot, turn heat off, cover and let cook 5 min

  11. Remove bay leaf from pot and serve
