The cakes may need a little milk to hold together. I used pouches of fish instead of canned to improve the taste, but you can use as much of either fish from leftovers or whatever is available. Ingredients listed twice are not an accident- same quantities of these ingredients go into cakes and sauce.

Recipe Ingredients for Fish Cakes with Caper Mayo

10 oz Starkist Solid White Albacore Tuna in water
6 oz Skinless Boneless Chunk Style In Water Pink Salmon
1 large Egg, White
1 tbsp Lemon Juice, Canned Or Bottled
5 sprigs Dill Weed, Fresh
6 tsp Prepared Dijon Mustard
2 tbsp chopped Onions, Spring Or Scallions
0.5 tsp Pepper, Black
4 tbsp Light Dressing
2 tsp Non-Pareil Capers
1 tbsp Lemon Juice, Canned Or Bottled
0.5 tsp Pepper, Black
0.5 fl oz Milk, Nonfat, Fluid

Recipe Directions for Fish Cakes with Caper Mayo

  1. Make caper mayo: In small bowl, combine light Miracle Whip or mayo with lemon juice, drained capers, and pepper. Add 1-3 tsp skim milk until desired consistency. Cover and refrigerate.

  2. Combine egg, lemon juice, dill, pepper, and dijon. Add flaked fish and crumbs of crackers. Spray large skillet with Pam. Heat on medium. Make cakes using scoop to keep cooking even, about 1 inch thick.

  3. Cook cakes over medium until browned and cooked through, about 5 minutes on each side.

  4. Serve with mayo and extra dill or lemon peel if desired.
