Really nice served with rocket, sweet chilli dip (such as blue dragon's) and a wedge of lemon, as a starter or light main course.

Recipe Ingredients for Fish Cakes, Baked

100 g haddock fillet
100 g salmon fillet
185 g tuna
300 g new potatoes
135 g mixed grain bread
1 tsp chili powder
1 red onion
3 garlic cloves
1 tsp ginger
1 egg

Recipe Directions for Fish Cakes, Baked

  1. Peel and boil the potatoes

  2. Place haddock and salmon in a saucepan with boiling water and allow to simmer for 20 mins

  3. Blend onions, garlic and ginger

  4. Drain and mash the potatoes, then add onion, garlic and ginger mix to the mash

  5. Remove the fish from the water, break down into flakes, then add this, along with the tuna to the potato mix

  6. Lightly dust hands with flour, then mould the mix into small circles

  7. Coat the cakes in egg, then bread crumbs

  8. Bake in the oven at 180 degrees celcius for 20 mins or until hot all the way through

  9. Alternatively you can grill them
