Very Easy, serve with flour tortillas or corn tostadas.

Recipe Ingredients for Fish Burritos

1 lb catfish fillets
1 cup stock, vegetable
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp paprika
5 garlic cloves, minced
14 oz refried beans (109442)
4 leaves boston lettuce, shredded

Recipe Directions for Fish Burritos

  1. Bring catfish fillets to boil in stock, along with cumin, oregano, paprika and garlic. Boil 1 minute, then turn fillets over and turn off burner. Let fish cool in stock. When fish is cool, drain off stock and reserve in a separate dish. Flake fish into bite sized portions.

  2. At serving time, add stock as needed back to skillet with fish to reheat.

  3. Heat tortillas or tostadas, spread with a think layer of beans, then top with fish and shredded lettuce. You may add condiments of your choice: sour cream, guacamole, salsa, etc.
