Recipe Ingredients for Fish - Baked Breaded Cod

375 approx 3 fillets, boneless & skinless Cod
30 g All Purpose Flour
50 almost all of a large egg - started with a whole, but had about egg
50 g Crispbread Sesame Rye , crushed into crumbs
1/4 tsp salt
1/8 tsp lemon pepper

Recipe Directions for Fish - Baked Breaded Cod

  1. Preheat oven to 180C.

  2. Lightly beat egg in a shallow bowl.

  3. In another shallow bowl mix all ingredients except cod, egg, cornstarch & oil. Mix well.

  4. Coat cod fillets with cornstarch, dip in egg to coat well and then press into crumb mixture to coat well.

  5. Drizzle each fillet with oil. Place on baking tray lined with baking paper.

  6. Bake for approx 15-20min, turning once during cooking time, till golden & crispy.
