Mediterranean flavors of olive oil, artichoke and tomato make this simple dish a summer breeze at any time of the year.

Recipe Ingredients for Fish with Artichokes

24 oz Tilapia fillets
4 tbl virgin olive oil
1/2 small onion
10 oz artichoke hearts
2 small tomatoes
1 tbl lemon juice
1/4 tsp pepper
2 tbl parsley

Recipe Directions for Fish with Artichokes

  1. Saute onion & artichoke 8 min until translucent

  2. Add tomatoes, lemon juice, s&p.

  3. Transfer to saucepan and keep warm.

  4. Saute fillets 2-3 min until golden on bottom.

  5. Flip fillets.

  6. Top with artichoke mixture.

  7. Reduce heat to low and cook 3-5 min more.

  8. Sprinkle with parsley before serving.
