Recipe Ingredients for firehouse beef barley soup

1 lb ground turkey
1/2 cup onion, chopped
2 carrots, chopped
4 1/2 cups beef broth
1 cup uncooked pearl barley
1 can (6 oz) tomato paste
1/2 tsp salt
1/2 tsp pepper
2 cups corn
1 cup green beans
1 cup lima beans

Recipe Directions for firehouse beef barley soup

  1. In a large, deep soup pot over medium high heat, cook turkey, onion, and carrots breaking up chunks of turkey with a wooden spoon until no longer pink.

  2. Stir in broth, barley, tomato paste,salt and pepper. Bring to a boil, reduce heat, cover, and simmer 1 hour or until barley is tender, adding up to 1 1/2 cups water if mixture sees dry or thick. Add corn, beans, lima beans, cover and cook 15 minutes or until beans are tender.
