I make this & serve it with steak & polenta (or potatoes). For us it makes plenty of ragout for several meals. If you like more ragout just adjust the calories.

Recipe Ingredients for Fire-roasted tomato ragout

28 oz fire-roasted tomatoes
6 oz shitake or cremini mushrooms
3 cloves garlic, smashed
1/2 c water
1 t crushed red pepper flakes
1/2 T olive oil
1 T blasamic vinegar

Recipe Directions for Fire-roasted tomato ragout

  1. Heat olive oil in pan. Add garlic & mushrooms. Cook for 3 minutes.

  2. Add tomatoes, water, & crushed pepper flakes. Bring to boil. Reduce heat & simmer for about 15 minutes.

  3. Serve with steak & polenta.
