1/2 pound scallops, dried with paper towels
2 cups Fire-Roasted Tomato & Garlic
1 tablespoon extra virgin olive oil

Recipe Directions for Fire-Roasted Tomato & Garlic Sauce with Fresh Scallops

  1. Heat a large skillet over medium-high heat. Pour the tablespoon of oil into the skillet and heat until the oil is hot. Place the scallops in the skillet and saute for 2-3 minutes, or until they begin to get a nice caramel color to them; be careful not to over-cook.

  2. Pour in the sauce and simmer for 5 minutes to blend flavors and reduce the sauce slightly. Serve over warm pasta.
