Fiona's Vietnamese Salad Rolls (based on Fresh with Anna Olson recipe)

Recipe Ingredients for Fiona's Vietnamese Salad Rolls

400 g shrimp
1 tablespoon butter
1 tablespoon garlic (crushed with chilis)
400 g rice noodles
8 grams rice paper (8 rounds)
1/2 cup bean sprouts
1/4 cup finely shredded carrot
1/3 cup snow peas
2 tablespoons salted cashews, crushed

Recipe Directions for Fiona's Vietnamese Salad Rolls

  1. Saute shrimp in butter, garlic and chili.

  2. In a bowl soak, noodles in very hot water for 15 minutes and drain well. With scissors cut noodles into 3- to 4-inch lengths.

  3. In a shallow baking pan (or a pie plate) dip a round of rice paper in hot water until pliable, just about 15 seconds.

  4. Carefully lay rice paper on a tea towel. Spread a small handful of rice noodles then carrot, bean sprouts, snow peas and shrimp in a row at one end of rice paper. Sprinkle with cashews. Tightly roll up rice paper, folding in sides when half rolled.

  5. Repeat with remaining rice paper rounds.

  6. Wrap rolls with damp paper towel, store in a resealable bag and chill.
