a salad thats really good in the summer, when you can get fennel bulb (^_^) use a mandolin to slice it extra thin, so the flavor doesn't overpower everything else. either endive or fennel not both, unless you want both, i find it too overpowering to do both.

Recipe Ingredients for filling veggie salad

1 c romaine lettuce
1/4 cup endive
1 fennel bulb
1 tomato
1/4 sweet onion (vidalia or 1015)
1 carrot
1/2 cup white button mushrooms
2 tablespoons lemon juice
1 tablespoon lime juice
1 tablespoon extra virgin olive oil

Recipe Directions for filling veggie salad

  1. wash the grit out of the lettuce carefully in cold water

  2. scrub the outside of the fennel bulb, if using, or wash the endive in cold water with the lettuce

  3. wash the tomato, then dice

  4. peel the skin off the onion then thinly slice

  5. scrub the carrot, but DO NOT PEEL (the peel has lots of vitamins, which is why we're scrubbing and not peeling)

  6. gently wipe off the mushrooms with a barely damp cloth, then slice

  7. juice the lime and lemon and mix it with the olive oil, until combined.

  8. put the lettuce in a bowl, then put the veggies on top of the lettuce and drizzle the dressing on top
