Recipe Ingredients for Filling for Spanikopita

300 grams frozen chopped spinach
1 egg
1 cup reduced fat feta cheese
1/4 cup parsley
1 onion
3 green onions
2 garlic cloves
1 1/2 tbsp olive oil
1 tsp oregano
1 tsp black pepper
1 tbsp lemon juice

Recipe Directions for Filling for Spanikopita

  1. defrost spinach and squeeze water out.

  2. cut onion, green onion and garlic and saute in olive oil until lightly browned.

  3. add spinach to pan and turn off heat mixing thoroughly.

  4. Crumble feta into bowl and mix with spinach mixture.

  5. Beat one egg and add along with lemon juice, oregano, parsley.
