A lovely taste treat, simple and divine. You can use either red or green peppers for this recipe...it's delish both ways. You can do this in a conventional oven, but I use my trusty microwave oven. This may result in a need for different baking times depending which you choose...this recipe was written from my experience with the microwave oven.

Recipe Ingredients for Filling Baked Yam and Veggie Trio

1 cup yam
2 red peppers
2/3 large onion
2/3 tbsp olive oil

Recipe Directions for Filling Baked Yam and Veggie Trio

  1. Cut the yam (1 med/large yam should do) into semi-large chunks. Slice the peppers however you like, and the onion into semi-large chunks. Mix in a mixing bowl with the olive oil. Add ground pepper if you so wish.

  2. Tumble onto a baking sheet lined with tin foil, bake at 400 degrees for 30-45 minutes, or until the yam can be poked cleanly and effortlessly with a toothpick. I suggest that halfway through you pull out the sheet and tumble the veggies around so they are baked evenly.

  3. Enjoy warm!
