1 pound sole fillets
1/4 cup lemon juice
1 teaspoon olive oil
1 small onion, thinly sliced
1 teaspoon dried parsley flakes

Recipe Directions for Fillet of Sole with Parsley & Lemon

  1. Cut fish into serving-size pieces.

  2. Place in an un-greased baking dish.

  3. Drizzle with lemon juice and oil;

  4. sprinkle with pepper.

  5. Arrange onion slices over fish;

  6. sprinkle with parsley.

  7. Cover and let stand for 5 minutes.

  8. Bake at 350 F for 20 minutes or until fish flakes easily with a fork.
