Rustic muffin...for a quick breakfast

Recipe Ingredients for Fig hazelnut muffins

1 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 eggs
1/3 cup brown sugar
1 1/2 tbsp molasses
1 tsp vanilla
1/4 cup canola oil
2/3 cup applesauce
1/2 cup buttermilk
1 cup chopped figs
2/3 cup chopped hazelnuts

Recipe Directions for Fig hazelnut muffins

  1. Set rack at top 1/3 of the oven. Heat to 400.

  2. In a large bowl, combine flour, baking powder, baking soda, cinnamon and salt.

  3. In a medium bowl, beat the eggs. Add brown sugar, molasses, banila, oil, applesauce and buttermilk. Mix till well blended.

  4. Add the liquid mixture to the dry. Fold in figs and nuts. Do not overmix.

  5. Divide batter into a prepared muffin tin.

  6. Bake 15 to 17 minutes.

  7. When done, set the tin on a rack to cool for 1 -2 minutes. Gently turn each muffin to release.

  8. Serve warm or cool to room temperature on the wire rack.

  9. Can be frozen for up to 3 months.
