Very good veggie chili, made with organic low sodium ingredients.

Recipe Ingredients for fiesta veggie chili - low sodium

4 1tsp Olive Oil
2 medium raw Onion Yellow
1/2 cup chopped Red Onion
4 clove Garlic
3 cup, diced Celery
2 1/2 cup, chopped Peppers, Sweet, Red
3 cup, chopped Peppers, Sweet, Green
1 1/2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
2 medium Orange Hothouse Bell Pepper
4 pepper Peppers, Jalapeno
2 pepper Peppers, Hot Chili, Red
2 serving Aylmer Italian tomatoes
8 tbsp Tomato Paste
250 grams Whole Kernel Golden Sweet No Salt Added Corn
3 serving Eden organics black beans
2 serving Eden organic kidney beans
2 tsp Chili Powder
3 dash Pepper, Black
3 tsp Sugars, Granulated

Recipe Directions for fiesta veggie chili - low sodium

  1. chop all veggies up however you like them, uniformly sized. chop up the 2 hot peppers with gloves on! - last and add them last when all other veggies have finished cooking. Put olive oil in pan and heat up.

  2. Start with garlic, and add rest of veggies to cook, takes about 20 minutes. Meantime, drain all the beans, in two separate colanders. the black beans go directly in with the chili, but the kidney beans get mulched with a can of tomatoes each before getting put in the chili. Make sure that whatever spices go in the chili you put them in when the veggies are all done cooking (softening) and let the spices cook for a couple of minutes before adding the beans, and tomato/bean mix. then add corn and tomato paste, and sugar. Simmer for at least an hour - 2 hours. freezes very well.

  3. makes approx 30 1/2 cup portions.
