Original recipe from all recipes, but I made it my own from what I have on hand. Forgot salt, add next time!

Recipe Ingredients for Fiesta Stuffed Peppers

448 g lean ground turkey
1 cup salsa
1/2 cup cooked brown rice
3 red peppers
1/2 cup shredded mozzarella cheese

Recipe Directions for Fiesta Stuffed Peppers

  1. Preheat oven to 350. Grease 9x13 glass pan with Pam.

  2. Cut peppers lengthwise and clean out seeds.

  3. Mix ground turkey, salsa and rice.

  4. Stuff peppers with mixture.

  5. Bake for 1 hour or until peppers are tender and mixture is cooked thoroughly.

  6. Top with cheese and broil until melted.
