A version of my favourite stuffed peppers recipe that is 17 day diet friendly. Should use fat free parmesan, but I don't have that.

Recipe Ingredients for Fiesta Stuffed Pepper (Turkey)

432 g lean ground turkey
38 carrots
1 cup Salsa (I used Pace)
1 large egg
1/4 tsp salt
4 red peppers
18 g Parmesan

Recipe Directions for Fiesta Stuffed Pepper (Turkey)

  1. Preheat oven to 350.

  2. Cut peppers in half lengthwise and clean out seeds and core.

  3. Cut carrots finely. You can add other veggies in here as well.

  4. Mix ground turkey, salsa, egg, carrots and salt well.

  5. Fill pepper halves with meat mixture.

  6. Bake for 1 hour or until peppers are tender and meat mixture is cooked through.

  7. Sprinkle parmesan on top and broil until melted.

  8. Enjoy!!!
