This is a great, healthy and filling salad. If you have a craving for mexican food, turn to this salad instead! It combines all of the healthy components in a mexican dish! I love this salad because I tend to put too much dressing (the most fattening part of a salad) however the small dollop of sour cream hits the spot. This salad is also cheap and easy to make. Enjoy! (Portions are to a single bowl)

Recipe Ingredients for Fiesta Salad

2 cups Mixed Baby Greens
0.5 cups Classic Cole Slaw
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/2 cup slices(52 g) Cucumber
1/2 cup Corn, Sweet, Yellow
1/2 medium Avocado
1 tbsp Light Sour Cream

Recipe Directions for Fiesta Salad

  1. Start by putting 2 cups of mixed greens at the bottom of your bowl

  2. On top of that, put your cole slaw mix (I do about a cup)

  3. Cut up tomatoes and cucumbers to your liking and add to salad

  4. Sprinkle1/2 cup of sweet corn on top

  5. Slice an avocado in half, de-pit and slice that half onto the salad

  6. Finish the salad off with a small dollop of light sour cream

  7. (optional: add 1 boiled, shredded chicken tender on top)
