Recipe Ingredients for Fiesta Rice

4 cups uncooked rice
8 oz black beans, drained
8 oz sweet corn
8 oz diced tomatoes
1 jalapeno pepper, diced
1 cup shredded cheese

Recipe Directions for Fiesta Rice

  1. Prepare rice as directed, adding cumin, cilantro, lime juice and salt to taste.

  2. Combine cooked rice, black beans, corn, tomatoes, and jalapeno in a large pot.

  3. Heat through, stirring frequently.

  4. Serve and top with cheese.
