Recipe Ingredients for Fiesta Potatoes

2 cups potatoes, peeled and cubed
2 tsp olive oil
1/2 tsp chili powder
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp garlic powder
1/2 cup Roma tomatoes, diced
1 tsp dried cilantro
2 tbsp green onion, sliced
1/4 cup salsa
1/4 cup sour cream, non-fat

Recipe Directions for Fiesta Potatoes

  1. Place potatoes and 1.5 cups water in a 12-inch skillet.

  2. Cover tightly with lid or foil and bring to a boil over high heat.

  3. Simmer over medium-high heat until potatoes are tender when pierced.

  4. Drain potatoes in colander and wipe pan clean.

  5. To pan, add oil, chili powder, coriander, cumin, and garlic powder.

  6. Stir over med-high heat for 30 seconds.

  7. Add potatoes and stir to coat.

  8. Mix in tomatoes, cliantro, and green onions.

  9. Over high heat, occasionally turn mixture with wide spatula until browned.

  10. Season to taste with salt.

  11. Serve with salsa and sour cream.
