1 egg, lightly beaten 1 medium onion, finely chopped 1/4 cup salsa 2 tbsp taco mix, low sodium 3 cloves garlic, minced 1 lb. extra lean ground turkey 1/2 cup corn 1/2 cup mushrooms, chopped 1/2 cup red bell pepper, chopped 1/2 cup grated carrot

1 egg, lightly beaten
1 medium onion, finely chopped
1/4 cup salsa
2 tbsp taco mix, low sodium
3 cloves garlic, minced
1 lb. extra lean ground turkey
1/2 cup corn
1/2 cup mushrooms, chopped
1/4 cup red bell pepper, chopped
1/2 cup grated carrot
1/4 cup green bell pepper, chopped
1/4 cup yellow bell pepper, chopped

Recipe Directions for fiesta confetti mexiloaf

  1. Combine all ingredients in a bowl and mix well by hand. Shape into a loaf and place in a glass baking pan.

  2. Bake about 50 minutes or until an instant-read thermometer inserted into the meat loaf registers 160F.

  3. Serve with additional salsa if desired. I like to serve this with a nice tossed salad, also.
