Quick and easy all-in-one casserole inspired by Kraft

Recipe Ingredients for Fiesta casserole

2 1/2 lbs lean ground beef
2 onions, chopped
2 green peppers, diced
2 cups frozen corn
2 cups salsa
4 tortillas, cut in half
390 grams cheddar cheese

Recipe Directions for Fiesta casserole

  1. Brown ground beef over medium heat. Halfway through process, add onions and continue cooking.

  2. When just crumbly, drain beef, reserving liquid. Allow liquid to cool (it goes faster if placed in fridge or freezer). Skim off fat and return liquid to beef.

  3. Add green peppers and cook for a few minutes until slightly soft.

  4. Add corn and salsa and cook until liquid is reduced and slightly thickened and flavours have melded.

  5. Line a large oblong pan with aluminum foil leaving ends long enough to cover the pan later.

  6. Spread a third of the meat mixture on the bottom of the pan. Top with cheese and half of the tortillas.

  7. Spread another third of meat mixture, then cheese then tortillas.

  8. Finally, spread with the last third of the meat mixture and top with the last of the cheese.

  9. Cook, covered with foil, at 375 F for about 30-35 minutes until bubbling and cheese is melted.

  10. Uncover, cook 5-7 minutes more until cheese is lightly browned.
