Recipe Ingredients for Fiesta Black Bean Salad

2 cups black beans
1 1/2 cup millet or cous cous
1/2 cup green bell pepper, diced
1/2 cup red bell pepper, diced
1/2 cup tomato, diced
2 tbsp jalapeno, diced
1/4 cup cilantro, diced
1 cup scallions, diced
1/4 cup lime juice
2 tbsp canola oil
1/2 cup feta cheese

Recipe Directions for Fiesta Black Bean Salad

  1. cook millet or cous cous and let cool

  2. drain and rinse can of black beans, add to medium mixing bowl

  3. add diced bell peppers, tomatoes, scallions and jalapenos to black beans

  4. when cooled, stir in grains to beans and veggies

  5. add chopped cilantro, oil and lime juice (add salt, pepper and cayenne to taste)
