Spicy Italian-American Dish with Noodles, Sauce, and Pork

Recipe Ingredients for Fiery Penne

1 lb ground pork
1 lb rigatoni
5 servings Francesco Rinaldi Hearty Tomato & Basil Sauce (24 oz)
2 tbs extra virgin olive oil
8 oz cremini mushrooms
7 cloves garlic, coarsely chopped
5 scallions, thinly sliced, green and white parts kept seperate
1 tbs crushed red pepper
1/4 cup flat-leaf Italian parsley
1 serving Archer Farms Shaved Parmesan (1/4 cup)
1 tsp salt
1/2 tsp black pepper

Recipe Directions for Fiery Penne

  1. Cook the pasta until al dente. Drain, reserving 1 cup of the pasta water. Transfer to a large serving bowl if desired.

  2. In a large skillet, heat 2 tbs olive oil over high heat. Add the pork, red pepper, salt and pepper. Cook, stirring occasionally, until no longer pink.

  3. Add the mushrooms, garlic, and white parts of scallions, stirring until softened, about 3 minutes.

  4. Lower the heat to medium, add the sauce and reserved pasta water. Simmer for 10 minutes.

  5. Pour contents of skillet over pasta. Add parsley, green parts of scallions, and cheese. Toss well and serve warm.
