Recipe Ingredients for fideua

1 tblsp olive oil
250 g onion
4 cloves garlic
100 g red pepper
50 g green pepper
100 g mushrooms
400 g tomato, puree or chopped with juice
40 g chickpeas (100g if already soaked)
300 g macaroni
1 tsp salt, and veggie stock cube like oxo or similar
2 tsp paprika
1/2 tsp cayenne pepper
500 ml water (maybe more, maybe less)

Recipe Directions for fideua

  1. soften onion and peppers in pan with oil (frying pan shape)

  2. add spices, stock cube and salt

  3. add all other veg, tomato juice and pasta. stir together

  4. fill with enough water to cook pasta

  5. bring to boil, simmer for 20 - 30 mins or until pasta is cooked

  6. sprinkle with oregano and lemon grass

  7. eat out of pan in traditional style
