This is a traditional Catalan (Barcelona, Spain region) dish. We buy shrimp with heads on (un-peeled) and we use fish broth. It is still great with ez peel shrimp and chicken or vegetable broth. It is very garlicky! "All i Oli" is Catalan for garlic and oil. It can be made in a blender, or with a stick blender, but traditionally is made with a pestel and morter. It is mixed in as a sort of sauce by each person. The pasta used is called Fideo pasta and can be made at home, just break angelhair spaghetti into inch long pieces. (My niece loves doing this!)

2 tablespoons olive oil
7 ounces pasta
3 cloves garlic
3 1/2 cups broth
1/2 pound shrimp
1 egg yolk
2 cloves garlic
1/8 teaspoon salt
1/4 cup olive oil

Recipe Directions for Fideua (This is a garlic lovers dream)

  1. All i Oli- In a morter add 2-3 cloves of garlic minced to squeezed through a garlic press (roasted garlic is much more mild) and pound the garlic until making a paste. Add salt and egg yolk, and mix. Now start moving the pestel in a cicrular motion, and without stopping, slowly add the oil. It will form a thick yelow paste. If it is really liquidly it is probably because your eggs or garlic ins not super fresh, but it is all the same and tastes just as good. When oil is all added put it in the fridge until time to eat.

  2. Heat a large skillet or saute pan to medium heat. Add shrimp and cover. Cook just until shrimp turn pink (about 3 minutes per side for frozen). Remove shrimp and place in a bowl and cover to keep warm.

  3. In a sauce pan add broth and turn to high so it will be boiling by the time you need it.

  4. In the same skillet (we dont rinse it) add olive oil. Cut 3 cloves of garlic lengthwise and add to pan. Lightly brown the garlic.

  5. When garlic lightly browned add Fiedo pasta (or broken angelhair) and stir often to brown pasta (this is important!).

  6. Add enough of the boiling broth to just cover the pasta and let it cook over med heat. Do not stir it Use your hood vent! This is why the broth needs to be boiling- so it doesn't cool the past down.

  7. When almost all the broth is evaporated add more again to just cover the pasta. Continue cooking uncovered and un-stirred.

  8. When the broth is almost gone try a piece and add small amounts of broth if needed. Allow to cook until pasta stands up on ends (im not kidding, it really does stand up).

  9. Top with shrimp and serve with red wine. All i Oli can be added to each persons liking in their own bowl, just set it out on the table!
