Recipe Ingredients for Fideos y mariscos

1 lb mussels
14 oz tomatos
4 cups fish stock
1 lb spaghetti noodles
1 lb shrimp
2 T olive oil
2 cloves garlic
1 onion
1 cup white wine
1 tsp bay leaf (1 whole bay leaf)
1 salt and pepper
1 T basil

Recipe Directions for Fideos y mariscos

  1. break spaghetti into 1-inch pieces and sautee in olive oil until golden. Set aside on paper towel.

  2. Sautee chopped onion and garlic until onion is transparent

  3. Add chopped/diced tomatos (I use can of the garlic and onion diced tomatoes). Cook until tomatoes are macerated.

  4. In a separate pot, add 4-6 cups water, 1 cup wine, and a bay leaf and cook the seafood until mussels open (pitch the ones that DON'T open). Set seafood aside.

  5. Add the seafood water (or fish stock) to the tomato-onion mix, and add spaghetti pieces.

  6. Cook until spaghetti is al dente.

  7. Add the seafood and cook a few more minutes.

  8. Serve in bowls
