Light Version of Twice Baked Potato

Recipe Ingredients for Fiddle Stuffed Sweet Potato

1 Sweet Potato
1 Bacon, chopped
1 oz Cheddar Cheese, shredded
1 tbsp Plain Yogurt
1 tbsp Chives, chopped
1 Salt and Pepper, taste

Recipe Directions for Fiddle Stuffed Sweet Potato

  1. Preheat oven to 450 degrees.

  2. Roast sweet potato in oven for about 40 minutes, or until done.

  3. Cut potato in half and core out the center of each and put in bowl.

  4. Add all the other ingredients and mix thoroughly.

  5. Restuff each half and place back in oven for 5-10 minutes.

  6. Serve
