Recipe Ingredients for Fiddle Quick Tomato Soup

1 tablespoon olive oil
1 yellow onion, diced (about 1 cup)
2 cloves garlic, minced
29 ounce diced tomatoes
1 cup vegetable broth
1/4 teaspoon red pepper flakes
1 tablespoon tomato paste

Recipe Directions for Fiddle Quick Tomato Soup

  1. Saute onions and garlic in olive oil. Put a pinch of kosher salt on onions. If onions start to brown too quickly add a little water. Cook onions for about 8 minutes.

  2. Add onions, tomatoes, broth, red pepper flakes and tomato paste to blender. Puree

  3. Add back to pot and cook for 3-5 minutes or until warm.
