Gingerbread men for the holidays!

Recipe Ingredients for Fiberful, Lowfat Gingerbread Cookies

3/4 cup margarine
1 cup sugar or 1/2 cup Splenda (sugar blend)
2 egg whites
1 3/4 cup whole wheat flour
2 tsp. baking soda
1 tsp. cinnamon
1 1/4 tsp. ginger
1/4 cup molasses

Recipe Directions for Fiberful, Lowfat Gingerbread Cookies

Cream sugar and margarine. Beat in egg + molasses. Sift flours, baking soda and spices (may use majority of flour as whole wheat). Divide into fourths. Roll dough on lightly floured surface (1/8th? thickness). Cut out gingerbread shapes (gingerbread men, snowflakes, angels) with cookie cutter. Bake 8-10 min. at 350 degress. Decorate if desired. Makes 2-3 dozen cookies.
