Recipe Ingredients for Fiber Rich Muffins

2 eggs
1/2 cup milk, 2% milkfat
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon baking soda
1 tablespoon baking powder
1/2 teaspoon salt
1 cup carrots, shredded
1 cup apple, shredded
1/4 cup oil
1/2 cup brown sugar
1 cup flour
1/2 cup almonds, slivered
2 1/2 cup cereal

Recipe Directions for Fiber Rich Muffins

  1. shred carrots and peeled apple

  2. mix oil, eggs and sugar, add milk and vanilla

  3. mix flour, baking powder, baking soda and cinnamon together with 1 cup Hodgson Mills multi grain hot cereal (couldn't get the analyzer to find it in the correct amounts for the cal count)

  4. mix dry ingredients with wet, add carrots and apple

  5. spoon into greased muffin cups or papers

  6. bake at 400 degrees for 20-22 min until done
