Muffins made from Hodgson Mill Multi Grain Hot Cereal

Recipe Ingredients for Fiber Rich Muffins

1 c Hodgson Mill Multi Grain Hot Cereal
1 c flour
1/4 c wheat germ
1 tbsp Baking powder
1/2 tsp baking soda
1/2 tsp salt
1 c carrots, shredded
1 c apple, peeled and diced\
1/2 c skim milk
1/4 c vegetable oil
1 tsp vanilla
1/2 c pecans

Recipe Directions for Fiber Rich Muffins

Preheat oven to 400F. Line 12 muffin cups with paper liners. Blend together dry ingredients. Add remaining ingredients and mix until blended. Batter will be thick; spoon into muffin cups. Bake 20-22 min or until golden brown.
